Stellenrust - Chenin Blanc Spumante Brut [Stellenbosch - South-Africa].
Stellenrust is one of the largest family-owned wine estates in South-Africa. They started in 1928 and expended over the years. Nowadays, they have almost 400 hectares of land spread out over the 'Golden triangle' & Bottelary Hills. This sub-region is not only known because of its impressive landscape, but it is also the residence of the most famous wine producers of the country. The wine maker Tertius Boshoff highly values a fair-trade product. In 2005, they decided to give a little back to their 70 employees & gave them a permanent contract and empowered them on 100 hectares of their land, as main shareholders.

Nature of the Soils | The grapes are selected from specially grown vineyards in the Bottelary area, which means the soil mainly consists of granite. |
Harvesting | The grapes for this amazing were picked between 24 & 25 degrees bailing. |

Vinification of the Wine | For this 'Spumante' the grapes were carefully pressed in order to gain the purest juice (e.g. apple aromas of the Chenin Blanc). It is made in the 'Prosecco style', with the second fermentation in the tank. The juice is fermented in a very cold tank, which allowed lees maturation for about three months before bottling. |
Tasting Notes | This Spumante is a Brut, which means there is a pleasant bubble present in the wine.The residual sugar is rounded to perfection by a splash of the Muscat de Alexandrie. This grape gives the Spumante the exotic flavours, which goes well with the lovely apple & fresh lime acidity of the Chenin Blanc. |
Recommendations | We recommend to serve this 'Spumante' at a temperature between 8 & 10 degrees Celsius. A great serve as aperitif, for festive occasions, or with seafood (oysters or lobster). |
