Laborie Vieille Vignes 2022 - Carignan [Languedoc Roussillon, France].
The vines of this great wine are located spread over the impressive region of the Pays d'Oc, Languedoc (France). The Languedoc was in history always a large wine producing area. In fact, the Languedoc is the biggest wine area of France & produces 40% of the country's wines. In history, the Languedoc was known as a bulking are, which means they chose quantity over quality. Nowadays, this area has a lot to offer. In our wine cellar you can find the hidden pearls of this amazing wine region. Hérault is located between the Southern mediterranean coast line & the black mountains in the north. The vines are situated at 1400 m. altitude. There is a huge diversity of soil in this area as the river brought granite earth from the mountains to the limestone soil of the area.

| Vinification & Maturing of the Wine | The vindication was carried out in a modern style. After the harvest, the grapes were destemmed & crushed. A part of the harvest goes through a modern process of thermovinification & maceration. (Thermovinfication - a pre-fermentation to enhance the rapid extraction of the colour of the grape). The other part goes through a traditional maceration on the grapes. The fermentation takes place at a controlled temperature to keep the wine's fruity aromas. The ageing is carried out in tanks with a small amount of French oak (to add more complexity & roundness to the blend). |
| Tasting Notes | The colour of this Carignan is purple red. In the nose, the wine has notes of blackberry & vanilla. On the palate, the wine is dense & velvety. Some notes of red berries & a lingering finish. |
| Recommendation | We recommend to serve this wine at a temperature between 16 & 18 degrees Celsius. A perfect match with red meats (E.g. stewed). Also roasted vegetables & ham is a great combination with this wine. A nice wine to enjoy with friends, family or even your lover. |
