Domaine Garrabou - Fontvieille - Chardonnay 2018 [Fontvieille (AOP Limoux) France.
The winemaker Frederic Garrabou decided. after 10 years of winemaking for other estates, to put all his experience into practice by opening his own domaine. Now he is able to create wines he loves & wants to share with the rest of the world. During his life he worked aside many winemakers in Burgundy, Australia, California & New-Zealand. A time, spent moving from one country, varietal & winemaking method to another enabled him to develop a true understanding of oenology. He thinks that the method is important but respecting the variety, its terroir, climatic conditions are the key to produce amazing wines. In 2014, he returned to the terroir of Gardie, in the Limoux area. Here, his father & grandfather had grown 22 hectares of vines. When he returned, he decided to work differently & turned the 2016 vintage to his very first cuvée; AOP Limoux white (chardonnay) & IGP Haute Vallée de l'Aude (Pinot Noir).

Vinification & Maturing of the Wine | The harvest is done manually at optimal maturity of the grapes. The grapes undergo a direct cold pressing in the cellar. Next, a static settling before a low temperature fermentation in 500L. barrels. Stirring on 'lees' is regular done & driven by tasting of Frederic. The wine is aged fro about 9 months in barrels. |
Tasting Notes | The nose is discreet, straight & slightly woody. In the mouth, the wine is clean & tense on the palate. There are notes of apricot & peach with a nice acidity level, creating the perfect balance. The finish is long & fresh. |
Recommendation | We recommend to serve this wine at a temperature between 10 & 12 degrees Celsius. |
