This young wine estate, located in the Elgin Valley, produces beautiful wines. The owners like to think that their wines reflect the passion & fun they had while making them. The remarkable thing is that the owners, Joris & Natalie, are originally coming from Belgium (our neighbours?!). In 2002, they signed the papers for this apple-farm, which has the perfect soil (terroir) & climate for viniculture.

The Sauvignon Blanc grapes grow on the so called 'sunlight block'. This part of the estate is located at 300 metres above sea-level, with a beautiful view over the area. The sea breeze & sunlight, stresses the vines to produce ripe, concentrate flavours into their grapes. The vines are not irrigated throughout the ripening season, forcing them to work hard in order to find water. This has a positive influence on the quality of this amazing Sauvignon Blanc.

Nature of Soils Yvonne - Deep, clay-rich duplex soil. | Sunlight - Medium texture gravelly soil.
Surface of the Chardonnay vines Yvonne - 1.5 Hectares (3.7 Acres). | Sunlight - 2.25 Hectares (5.6 Acres).
Average age of the vines The planting year is 2005.
Alcohol percentage 13.0% vol.
Vinificiation & Maturing

After gently pressing & cold setting, the wine is inoculated with a combination of five yeasts & fermented cold until dryness. After the fermentation process, the wine undergoes lees contact for nine weeks on the gross lees. The wine is left as separated components until the final blending in October.

Tasting notes

This Sauvignon Blanc has a fruity and ripe expression under built by green & floral notes. In the nose, some hints of elderberry & peach. In the mouth, the wine shows well balanced fruit & acidity with a broad, lingering finish due to the lees contact.

Recommendations

Drink it youthfully for the next two or three years. But the wine can also be cellared up to eight years. We recommend to serve this wine at a temperature between 8 & 10 degrees Celsius.
